Make about 30ml espresso with a coffee machine and pour it into the base of your cup. Very slowly pour the milk into the cappuccino. For a smooth cappuccino pour the milk over the espresso in a thin, steady stream. However, for a cappuccino with a foamy head, hold back the foam with a spoon and gently pour the milk over the espresso. Spoon the foam over the top. Dust the surface with cocoa powder if desired. Serve hot.
